This coffee is named after the Phish song, The Sloth. If I could catch The Sloth every time I went to a show, I would be beaming from my ears (not that I am not beaming anyways from the shows!) And if I’m with my dear friend Eddie and this song drops, you best get out of the way ‘cuz he’s about to get loose. We think Sloths are so cool, and what makes this coffee so cool is the unique processing called Anaerobic Fermentation. This process means that there is zero oxygen in the fermentation tank. One of the first (and most critical) steps in coffee’s journey is called “processing”, an umbrella term that refers to how the ripe red fruit is removed from the coffee seed. For this specific process, they remove all oxygen from the tank, which does two things, prolongs the fermentation process (without the possibility of over fermentation) and keeps the temperature cool. The effect is a truly unique flavor experience. You will find this coffee has a clear vibrant acidity that will sparkle all through your mouth, incredible fruit notes, and overall flavors you have never experienced before!
Costa Rica is considered the best place in the world to see sloths up close. And given our shared love of their general lifestyle of living in the moment and taking things slowly, what better name to release our first Costa Rica ever than The Sloth.
The Coffee hails from Hacienda La Minita which was founded on the principle that coffee is much more than a commodity and should be enjoyed as luxuriously as an exquisite glass of wine or a gourmet meal. What gives them an advantage, after all these years, is their ownership and hands-on management of our partner coffee farms and mills. They take pride in being on the ground every day, nurturing each coffee tree, supporting their employees, cupping all pre-shipments and arrival samples, and striving to get the best coffee possible into the hands of coffee roasters who are seeking the highest quality and standards that La Minita offers.
