ORIGIN STORY
Meseta de Popayán – Colombian High-Altitude Specialty Coffee
The Meseta de Popayán is a celebrated coffee-growing plateau in the Colombian Andes, located between 1,500 and 2,070 meters above sea level. This elevation, combined with the region’s volcanic soil, steady mountain climate, and slow cherry maturation, creates ideal conditions for producing high-quality Colombian specialty coffee with remarkable clarity and balance.
Through Cofinet, we collaborate with approximately 65 dedicated coffee producers across the Meseta de Popayán. Our model prioritizes long-term partnerships rather than transactional purchasing. By paying above-market prices, we recognize the care, expertise, and pride farmers bring to their work. This relationship-driven approach helps strengthen sustainable coffee farming in Colombia while maintaining consistent quality from harvest to harvest.
In the cup, this coffee showcases the hallmark qualities of high-altitude Colombian coffee—balanced, structured, and expressive.
You’ll notice light floral aromatics rising from the cup, followed by caramel-like sweetness with subtle fudgy notesthat carry through the mid-palate. A gentle, rounded acidity adds liveliness without sharpness, finishing clean with a delicate brightness.
The result is a coffee that sits comfortably in the sweet spot of specialty coffee—refined enough for seasoned enthusiasts yet welcoming for those exploring premium Colombian coffee for the first time.
It also performs exceptionally well across different brewing styles:
-
Espresso: Smooth, balanced, and naturally sweet
-
Drip / Filter: Clean, elegant, and well-structured
-
Milk-based drinks: Creamy, comforting, and indulgently sweet
Whether brewed as espresso, pour-over, or drip, Meseta de Popayán offers a versatile and consistently balanced Colombian coffee experience.
